New York State Fair. Held in Syracuse every year since the 1800s, this classic New York celebration has blossomed into a giant 12-day showcase of what's best in the state. Hundreds of exhibits and competitions highlight art, crafts, cooking, technology and world-class wines.
Watch the international horse show and then root for your favorite dog in the agility contest. See how flax turns into linen at the agricultural museum. Ride a camel at the petting zoo and listen to country music at the Beef Barn Jamboree (no kidding).
If you love milk, stop by the Dairy Building to sample (really) fresh milk and prize-winning cheeses. Time it right, and you'll meet the Dairy Princess, the winner of the annual state pageant.
There's also a big-top circus, a daily parade, spectacular fireworks, and nightly shows with top stars. The State Championship Demolition Derby on the last night ends the fair with a real bang.
