Made in New York State! Howes Cave, N.Y. - A new cave-aged cheese is available at Howe Caverns. Aged 156-feet below the earth's surface in the great cave, the new cheese is made by Yancey's Fancy, an artisan cheese maker located in Corfu (Genesee County). "Our Retail Manager Sue deBruijn contacted several New York cheese makers before partnering with the award-winning Yancey's Fancy," said General Manager Robert Holt. "While we've had cave-aged cheese before, our previous partner could no longer keep up with the demand for the product. So, this new venture was launched in late summer," Mr. Holt said. "Yancey's Fancy is known for its New York State cheddar cheeses," Ms. deBruijn said. "Our cave-aged cheese is their New York Double Extra Sharp Cheddar which has exceptional body and texture." Of great importance to Howe Caverns was the fact the cheese is "100 percent New York State and uses milk only from State dairies. With the current dairy crisis, we believe it is very important to support New York's dairy farmers," Ms. deBruijn noted. The cheese is available only at Howe Caverns' Visitor Center.
