Chef Nate Limwong was born in Surat Thani, a city culturally rich in Southern Thai cuisine and known for its fresh seafood. She has been head chef at some of the NYC's notable Thai restaurants, including Soothr, Fish Cheek and Tong. Chalong is chef Limwong's return to the local southern Thai tastes of her hometown, focusing on spices and fresh seafood.
