Perched atop the award-winning hotel, the reimagined rooftop has been transformed into a lush tropical oasis where vibrant florals, energizing live entertainment, and a new agave-forward cocktail and culinary program curated by Chef John Fraser of Michelin-starred JF Restaurants come together to create a captivating summer escape.

  • THE DRINKS // At the heart of Bar Tontine’s cocktail program is a creative exploration of the margarita reimagined through playful techniques and fresh regionally inspired ingredients. Highlights include the Pimento, a layered blend of reposado tequila, bell pepper & berry cordial, and bell pepper confetti, and the El Tigre, which draws on Peruvian-style Leche de Tigre for a refreshingly savory twist on the agave-based staple. The menu also features creative non-alcoholic selections, and an interactive build-your-own margarita where guests can curate their drink to their liking.
  • THE BITES // The ingredient-driven menu reflects Chef John Fraser’s California roots with influences from Mexican flavor profiles and cooking techniques. Each dish is crafted to pair naturally with the cocktail program - balancing spicy, salty, sour, and sweet notes that complement agave-forward libations and encourage social shared dining. Highlights include Caviar NachosOyster AguachileTuna + Truffle Tostadas, and Fresh Guacamole served with house-made chips.
  • THE VIBES // Surrounded by lush, tropical florals, warm lighting, and music curated to reflect the spirit of Latin America, Bar Tontine provides a rooftop escape that celebrates the magic of summer.
