The years-in-the-making event will feature six Champagnes from the legendary House of Drappier alongside a five-course dinner by Executive Chef Joseph Michaud.
Saratoga Springs, N.Y. (August 4, 2026) — Standard Fare and Bocage Champagne Bar are thrilled to welcome Hugo Drappier, eighth-generation winemaker of Champagne Drappier, to Saratoga Springs for an intimate, one-night-only Champagne dinner on Thursday, October 15.
The evening will offer guests the rare opportunity to meet, taste and learn alongside one of Champagne’s legendary winemakers. Hugo Drappier will guide guests through six Champagnes from his family’s celebrated House, sharing the people, history, vineyards and winema king philosophy behind every glass.
The Champagnes will be accompanied by a five-course menu inspired by the region and prepared by Standard Fare Executive Chef Joseph Michaud. Designed as a long and relaxed evening around the table, the dinner will invite guests to experience Champagne Drappier not simply as a collection of wines, but as the expression of generations of family, place, passion and precision.
“This is truly an event years in the making, and we are elated to finally see it come to fruition,” said Clark Gale and Zac Denham. “We have had the privilege of meeting and tasting with Hugo many times over the years, and there is something magical about hearing firsthand how much passion, thought and precision goes into every drop. Champagne Drappier has long been one of our favorite Houses. This evening gives us the opportunity to share what inspires us so deeply with our guests in the most direct and personal way possible.”
Before the public dinner, members of the Bocage Champagne Society will be invited to an exclusive meet-and-greet with Hugo at Bocage Champagne Bar. During the private reception, Society members will have the opportunity to meet Hugo and taste the debut of one of Champagne Drappier’s newest cuvées. This portion of the evening is reserved exclusively for Champagne Society members and is not open to the public.
The five-course Champagne dinner will begin at 7:00 p.m. at Standard Fare. Tickets are $335 per person, inclusive of tax and gratuity.
Champagne Society members reserved the majority of the evening’s availability during a private presale, leaving just eight seats available to the public. Due to the extremely limited availability, ticket purchases are limited to a maximum of two seats per transaction.
Tickets may be purchased directly through the Standard Fare website at: https://www.standardfaresaratoga.com/store/events/
